Summer Strawberry Smoothie and Freezer Pops

These have been our favourite treat lately. If you don't freeze the mix, it makes a wonderfully refreshing and filling afternoon chiller, as well.

About 1 lb. fresh or frozen strawberries
filtered water
honey
2 c. plain yogurt
1/4 - 1/2 c. heavy or whipping cream
1 tsp. vanilla

Heat strawberries in an inch or two of filtered water in a medium saucepan until they are "saucy." Stir in honey to taste (about 1 - 2 tbsp.) Cool slightly, then blend until smooth. Put into glass pitcher, add remaining ingredients and stir well. Pour into popsicle forms and freeze. Or, chill and serve as a beverage.

Variation: Use fresh peaches instead of strawberries, and add a little nutmeg to the mix. Mmm-mm!

Mmmmmmmm......sounds yummie! This must mean it's finally warm enough up there to appreciate the cooler things in life???? (giggle!)
